METHOD FOR MAKING LEMON CURD

In a saucepan, squeeze the juice of the lemons and mix with the butter. Melt over low heat.
In a bowl, whisk the eggs with the sugar while whisking vigorously, then pour the melted butter and lemon juice over them.
Put the mixture back in the pan and cook for 3 minutes, until the lemon juice has thickened.
