My Grandmother Mary Mcarthur 1920 – 2006
Mary was born in 1920 in Dunfermline, Fife Scotland.
Throughout Mary’s life she learned and adopted to 3 Cultures being Scottish, Canadian and finally Australian.
Mary served in the Royal Canadian Army as personnel recruitment. She was elegant, persuasive and oh such a great grandmother to me. She was my mentor, my life coach and my inspiration. I am proud to share this recipe with you today.
Recipe:
Step 1
460 grams Unsalted Butter
440 caster sugar *
* (alternative 240 gram caster sugar + 200 gram brown sugar)
A Dollop of Golden Syrup
* (Please now cream these together as shown)

Step 2
Whole Eggs 160ml
* Please now add to mixture add to mixture as shown

Step 3
550 grams Plain Flour + 10 grams Baking Powder
* Please add this to recipe as shown
Step 4
450 grams Chocolate Chips
*Please add these and Mix together as shown
Step 5
Divide Batter and shape into even cylindrical weights.
Roll into Grease Proof Paper and place in Freezer on a flat surface until consolidated.
Step 6
Divide into 2 cm and place staggered on a flat tray and bake at 175 . C / 79.4 for 12-15 minutes until golden brown.
